 A Kamado is a ceramic built cooking vessel in which you burn charcoal, early versions have been found dating back over 3000 years! The ceramic construction means less heat is required as it is so well insulated, we have used both the more traditional metal built kettle grills and the kamado and you get at least twice the grilling time out of one load of charcoal on the kamado compared to the metal built kettle grill. It is also far easier to control and the finished food is far superior, a consistent heat really does make for a more tender, juicy result!
